A chef base refrigerator is a low, drawer style refrigerator built to sit under the cook line with a griddle, charbroiler or range sitting right on top of it. Choosing one comes down to four things: a width that matches the equipment above it, a top rated for that equipment’s weight, drawers that fit the pans you already use, and power and airflow that suit your station. This guide walks through each one using the specs on the chef base refrigerator listings we carry, from about $1,550 for a 52 inch two drawer unit to more than $11,000 for a Traulsen.
What a refrigerated chef base does
WebstaurantStore’s undercounter refrigeration buying guide separates three kinds of low refrigeration. Undercounter units sit beneath an existing counter. Worktop units add a prep surface. A refrigerated chef base uses a reinforced top to support heavy cooking equipment such as griddles or charbroilers, with ingredients stored in drawers below. That reinforced top is the whole point: the cook pulls proteins and sauces from the drawer and drops them on the flat top without walking to a reach in.
Because the unit sits under heat producing equipment, treat it as part of the cook line, not a spare fridge. It should be sized to the appliance on top, and the appliance should be one the chef base is rated to carry.
Chef base refrigerator sizes
Chef bases are sold by width, and the common widths on our listings are 36, 48, 52, 60, 72, 84 and 96 inches. The usual approach is to match the chef base to the width of the countertop equipment, or to two pieces placed side by side. A 36 inch griddle goes on a 36 inch base; a 36 inch griddle next to a 24 inch charbroiler fits a 60 inch base. Two drawer models cover the shorter widths and four drawer models start around 72 inches.
| Model | Width | Drawers | Listed capacity or pans | Price |
|---|---|---|---|---|
| Hurakan 36 inch 2 drawer | 36 in | 2 | 1.75 in stainless top | $1,712.00 |
| Hurakan 48 inch 2 drawer | 48 in | 2 | 9.6 cu ft, 33 to 41 F | $1,883.00 |
| 52 inch refrigerated chef base | 52 in | 2 | 10.5 cu ft, 18 one third pans included | $1,550.99 |
| Hurakan 60 inch 2 drawer | 60 in | 2 | 12.7 cu ft, 33 to 41 F | $2,217.00 |
| Hurakan 72 inch 4 drawer | 72 in | 4 | Side mounted refrigeration | $2,505.00 |
| U-Line UCRB572 | 72 in | 4 | Eight 12 x 20 x 4 in pans | $9,312.00 |
| Traulsen TE048HT | 48 in | 2 | Four 12 x 20 x 6 in pans | $11,438.96 |
Measure the equipment footprint, not just its nominal size. Some griddles have side splash guards or grease troughs that make them wider than the name suggests, and you want the feet to land on the top, not hang off the edge.
Chef base under griddle: check the top rating
A chef base under griddle or charbroiler setup puts real weight on the top, so read the load figure on the listing. The 52 inch refrigerated chef base lists a 16 gauge, 1.77 inch top that supports 990 lb, plus 200 lb per drawer. U-Line lists static top weights for its freezer bases, for example 1,508 lb on the 48 inch UCFB548 freezer chef base. If a listing does not give a top rating, ask us before you set a heavy appliance on it.
Also confirm that the cooking equipment’s manufacturer allows it to sit on a refrigerated base. Some equipment requires a specific clearance underneath or a heat shield, and the equipment manual has the final word.
Drawers and pans
Drawer capacity is usually described in full size food pans (12 x 20 inches) and the depth those pans can be. The details differ by brand:
- U-Line’s 48 inch UCRB548 holds four 12 x 20 x 4 inch pans across two drawers, pans not included.
- Traulsen’s TE048HT holds four 12 x 20 x 6 inch pans side by side, so it takes deeper pans.
- The 52 inch unit includes 18 one third size pans, 4 inches deep.
Plan the drawer layout around the line. A common setup keeps raw proteins in one drawer and cooked or ready to serve items in another, which also makes it easier to keep the right items at the right holding temperature.
Temperature, refrigerant and certifications
Most refrigerated chef bases we list hold 33 to 41 F, the range shown on the Hurakan 48 and 60 inch models and the 52 inch unit. U-Line’s refrigerated base lists 28 to 46 F with digital control and alarms, while its freezer base lists -13 to 14 F if you need frozen product on the line. Refrigerants vary: Hurakan, Traulsen and the 52 inch unit list R290, and U-Line lists R449a. For health inspection purposes, look for the sanitation listing on the product page, such as ETL sanitation on U-Line or ETL on the 52 inch unit, and check what your local health department expects.
Power, airflow and mobility
Read the electrical line before you order. U-Line’s 48 inch refrigerated base runs on 115 V, draws 7.3 running amps, and ships with an 11 ft cord and a NEMA 5-15P plug, and U-Line says it is pre-wired for a dedicated outlet. Hurakan’s 48 inch lists a 1/6 HP compressor with self-contained, side mounted refrigeration.
Airflow matters because a chef base lives in the hottest spot in the kitchen. WebstaurantStore notes that front breathing units can be built into tight spaces, while side or rear breathing units need open airflow around them, and poor ventilation can lead to overheating and compressor strain. Side mounted systems like Hurakan’s need room at the side where the condenser vents. Casters help with cleaning: the 52 inch unit has four casters with two brakes, and Traulsen lists 4 inch casters. A licensed electrician should confirm the circuit, and the hood and fire suppression layout above the line still need to meet local code.
Budget vs premium chef bases
The price gap is large. Hurakan and the 52 inch unit sit under about $2,600, while U-Line and Traulsen run from roughly $6,300 to over $19,000 depending on width. The listings show some of what the premium models add, such as alarms and pre-wired dedicated circuits on U-Line and microprocessor controls on Traulsen. Frequently asked questions
What size chef base refrigerator do I need?
Match the chef base width to the countertop equipment on top of it, or to the combined width of two pieces side by side. Measure the equipment’s actual footprint, including splash guards, and make sure all of its feet land on the top.
Can I put a charbroiler on a refrigerated chef base?
Many chef bases are designed for griddles and charbroilers, but check two things: the top load rating on the chef base listing, and the charbroiler manual’s clearance requirements. Our charbroiler buying guide covers sizing the broiler itself.
What is the difference between a chef base and a worktop refrigerator?
A worktop refrigerator adds a prep surface over cold storage. A chef base has a reinforced top meant to carry cooking equipment, with drawers instead of doors so cooks can reach ingredients without stepping back.
Do chef bases come as freezers too?
Yes. U-Line sells freezer chef bases in 36, 48, 60 and 72 inch widths, with a listed range of -13 to 14 F.
