Frozen Drink Machine Guide: Bowls, Output, Power

A frozen drink machine chills a sugared mix in a refrigerated bowl while an auger keeps it moving, so it turns to slush instead of a solid block. Picking one comes down to three numbers: how many bowls you need for your menu, how much each bowl holds, and what power and space you have behind the counter. This guide walks through each one using the six machines we carry, with serving math you can check yourself.

How a frozen drink machine works

ICETRO describes its slush line as non-carbonated frozen beverage machines. You pour in a prepared mix, the bowl chills it, and the machine holds it at a pourable slush. Frozen carbonated drink machines are a different category of equipment and are not covered here.

ICETRO’s own slush machine FAQ gives useful working numbers for its models:

  • A non-alcoholic mix typically takes about 30 minutes to freeze, or about 15 minutes if you pre-chill the mix.
  • With alcohol, freezing takes roughly 45 to 60 minutes.
  • An overnight refrigeration mode holds the mix cold to save energy. The mix goes back to liquid, so you restart freeze mode the next business day.
  • Viscosity is preset at the factory, with 4 settings available through an adjustment screw on the back of the unit.

ICETRO notes these times depend on room temperature, mix temperature, sugar and alcohol content.

Frozen drink machine comparison: our 6 models

Prices below are listed at the time of writing and can change. ICETRO capacity and wattage figures come from the ICETRO America FAQ linked above; widths come from our listing titles. The two unbranded machines use the figures in their product descriptions.

Machine Bowls Capacity per bowl Power Price
ICETRO SSM-180 1 3.2 gal 115V, 440 W $1,827
ICETRO SSM-52 2 2 gal 115V, 500 W $2,295
ICETRO SSM-280 2 3.2 gal 115V, 1,020 W $2,910
ICETRO SSM-420 3 3.2 gal 115V, 1,350 W $4,020
12L x 3 slushy machine 3 12 L (3.17 gal) Not listed $1,571.99
15L x 3 slushy machine 3 15 L (3.96 gal) Not listed $1,483.99

Our listing titles give ICETRO widths of 7 inches for the SSM-180, 15 inches for the SSM-280, 16 inches for the SSM-52 and 23 inches for the SSM-420. The 12L unit is listed at 27.95 x 23.03 x 34.25 inches and the 15L unit at 27.56 x 22.05 x 38.19 inches. Confirm dimensions with us before you build a counter around one.

Slushy machine bowl count: match it to your drink menu

Each bowl holds one flavor or recipe at a time, so bowl count is really a menu decision.

  • One bowl: a single signature drink, such as a house frozen lemonade or one margarita. The SSM-180 fits here.
  • Two bowls: the common setup for a bar or snack stand running one alcoholic and one non-alcoholic drink, or two flavors. The SSM-52 has smaller 2 gallon bowls; the SSM-280 has 3.2 gallon bowls.
  • Three bowls: more flavors, or one popular flavor doubled up. The SSM-420 and both unbranded machines have three bowls. The unbranded listings say each tank can be set independently, with a slushy mode and a cold drink mode.

ICETRO recommends a deep clean when you change mixes, so a bowl that rotates flavors often means more cleaning time. Extra bowls let you keep a flavor running instead.

Sizing a commercial slush machine by servings

Use 1 gallon = 128 fluid ounces. ICETRO also notes that the mix usually fills about 75% of the listed bowl capacity, so plan on that, not the full number.

  • 3.2 gallon bowl: 3.2 x 128 = 409.6 fl oz. At 75%, that is about 307 fl oz, or roughly 25 twelve ounce drinks per bowl.
  • 2 gallon bowl: 2 x 128 = 256 fl oz. At 75%, about 192 fl oz, or 16 twelve ounce drinks per bowl.

By that math, one fill gives roughly 25 drinks on the SSM-180, 50 on the SSM-280, 75 on the SSM-420 and 32 on the SSM-52, all at 12 ounces. Smaller cups stretch those numbers.

The unbranded listings state about 144 cups per batch for the 12L x 3 unit and about 180 cups for the 15L x 3 unit. Three 3.17 gallon tanks hold about 1,217 fl oz, so 144 cups works out to about 8.5 ounces each, which is a smaller cup than the 12 ounce math above. Compare models at the same cup size.

Because a fresh fill takes about 30 minutes to freeze without alcohol, size for your busiest hour, not your daily total. If you sell out of a bowl mid rush, you wait for the next batch.

Margarita machine mixes: Brix, sugar and alcohol

Sugar is what keeps slush from freezing solid. WebstaurantStore’s slushie mix guide explains that one degree Brix equals 1 gram of sucrose per 100 grams of solution. Too much sugar keeps the mix from freezing; too little lets it freeze into a solid mass that can damage the machine.

  • Target Brix: WebstaurantStore recommends 13 to 15, and ICETRO recommends the same range. Check your machine’s manual, since requirements vary.
  • Measure it: a handheld Brix refractometer reads the sugar level. Below 13, add sugar; above 15, add water.
  • Syrup ratio: WebstaurantStore says most premade slush syrups mix at 1:4 or 1:5 with water. Follow the label.
  • Sugar free mixes: ICETRO says no. The sugar level must be in range for the machine to make proper slush.

For frozen margaritas and other adult drinks, ICETRO says alcohol should not exceed 20% of the mix and recommends 8% or less with a Brix of 13. The unbranded listings recommend about 13% sugar and alcohol below 13%. WebstaurantStore notes that alcohol raises the Brix reading and slows freezing, and that not every slush machine is rated for alcohol, so check before you pour. Serving alcohol also follows your liquor license and local rules.

Power, placement and ventilation

All four ICETRO models in our catalog are 115V according to their listing titles. ICETRO lists power use from 440 W for the SSM-180 up to 1,350 W for the SSM-420. The unbranded listings do not state voltage or wattage, so call us before you order if your outlet is fixed.

ICETRO says its slush machines are not certified for outdoor use because excess heat interferes with slush production. Plan for an indoor counter with room for air around the unit, and follow the clearance figures in the installation manual for your model. A licensed electrician and your local code have the final word on circuits and outlets.

Cleaning and food safety

ICETRO recommends a daily rinse and sanitize plus a weekly deep clean, especially when changing mixes, and replacing wear parts every 6 months. The unbranded machines list a one button automatic cleaning function and tool free disassembly. Whatever you buy, follow the manufacturer’s cleaning instructions and your local health code.

Frequently asked questions

How many drinks does a frozen drink machine make?

It depends on bowl size and cup size. A 3.2 gallon bowl filled to about 75% holds roughly 307 fl oz, which is about 25 twelve ounce drinks. A 2 gallon bowl gives about 16.

Can a slushy machine make margaritas?

Many can, if the manufacturer rates it for alcohol. ICETRO allows up to 20% alcohol and recommends 8% or less with a Brix of 13. Expect alcoholic mixes to freeze more slowly.

What Brix should slush mix be?

Both ICETRO and WebstaurantStore recommend 13 to 15 Brix. Check with a refractometer before filling the bowl.

Does a commercial slush machine need a special outlet?

The ICETRO models we carry are listed as 115V. Confirm amperage and circuit needs with the spec sheet and a licensed electrician.
