Sandwich prep table sizes follow a simple pattern: the width sets the door count, and the top style sets how many pans you get. The units we carry come in widths of roughly 27, 36, 48, 60 and 72 inches, with pan rails for 1/6 size pans (sandwich) or 1/3 size pans (pizza). Below: standard widths, what a mega top adds, how many pans fit, and what to measure before delivery.
Standard sandwich prep table sizes and door counts
Our listings fall into clear size classes:
- 27 to 30 inches, 1 door. The 27 inch W 1 door sandwich salad prep table holds 7.4 cu ft below and runs on 115V/60Hz with R290 refrigerant.
- 44 to 48 inches, 2 doors. The Orikool 48 inch sandwich and salad prep table is listed as ETL certified and DOE compliant with R290 refrigerant.
- 60 inches, 2 doors. See the Orikool 60 inch prep table.
- 70 to 72 inches, 3 doors. The Hurakan 70 inch 3 section sandwich prep table has a 1/4+ HP self-contained, rear-mounted system, and the 72 inch W 3 door prep table lists 20 cu ft of storage.
Listed heights run from about 42 to 47 inches.

Mega top vs standard top prep table
A mega top fits more pans into the same width than a standard top. Our listings show the difference:
- At 27 inches, the Hurakan standard model holds six 1/6 pans while the Hurakan 27 inch mega top holds nine.
- At 48 inches, a 47 inch Hurakan standard model holds twelve 1/6 pans while the Hurakan 48 inch mega top holds eighteen.
- At 60 and 71 inches, Hurakan’s Megatop models list 24 and 30 pans.
The tradeoff is cutting board depth. Traulsen’s own descriptions show it: the standard Centerline CLPT-2708 has a 12 inch deep cutting board, while the Traulsen CLPT-2712 mega top has an 8 inch deep board at the same 27 inch width. If your menu is wraps, subs or bowls with many toppings, a mega top usually wins. If staff need room to build large sandwiches or portion on the board, a standard top gives more working surface.
How many pans fit in a prep table?
Pan counts are quoted in 1/6 size pans because that is the default for sandwich and salad rails. According to Vollrath’s spec page, a sixth size Super Pan V is about 6.4 x 6.9 inches and holds 1.8 quarts brimful at 4 inches deep. A third size pan is about 12.8 x 6.9 inches and holds 4.1 quarts at the same depth, so one 1/3 pan takes the space of two 1/6 pans.
- Mix sizes on the rail. Hurakan’s Megatop listings say the rail takes 1/6 pans “or equivalent pan sizes,” so you can swap two sixths for a third on a high-volume item like lettuce.
- Check pan depth. The Orikool sandwich models list pans “up to 4 inches deep.” Deeper pans may not let the lid close.
Pizza prep table sizes
A pizza prep table is built differently from a sandwich unit. It uses 1/3 size pans for toppings, which hold more of each ingredient, and a wider cutting surface so you can stretch and top a pie. The Orikool 44 inch pizza prep table holds six 1/3 pans with 11 cu ft of storage below for dough and sauce. Moving up, the 47 inch Hurakan pizza table also holds six 1/3 pans, and the Hurakan 71 inch pizza prep table holds nine.
Depth, doorways, casters and power
Width is what most buyers measure, but depth is what causes delivery problems. The listings above run from about 31.5 to 35 inches deep (the Orikool 72M is 35.12 inches deep, versus 31.46 for the standard Orikool 72). Before you order:
- Measure every doorway, hallway and turn from the delivery point to the line, and compare it with the depth and height, not just the width.
- Leave room behind the unit. Hurakan and Traulsen models use rear-mounted, self-contained refrigeration, and the Orikool listings include rubber anti-collision blocks for improved heat dissipation, which tells you the unit needs some clearance to breathe.
- Check for casters. The Orikool, fan-cooled and Traulsen Centerline listings include casters, most with brakes, which makes cleaning behind the line much easier.
- Confirm power. The 27, 48 and 72 inch fan-cooled models list 115V/60Hz. Where a listing does not state voltage or amperage, call us for the spec sheet before you plan the outlet.

Refrigerated prep table temperatures: holding at 41 F
The FDA Food Code 2022, section 3-501.16, requires cold-held time/temperature control for safety food to be kept at 41 F (5 C) or less. The sandwich tables in this guide list setting ranges that top out at 40 or 41 F, such as 33 to 41 F on the Hurakan and fan-cooled models and 33 to 40 F on the Orikool models. Check pan temperatures with a probe thermometer during service, not just the cabinet display. Orikool’s listings note that the lift-up lid helps maintain food-safe temperatures, so close it between rushes.
Picking your size
A food truck or small cafe often fits a 27 inch one door unit, a deli with one make line tends to land on 48 or 60 inches, and high-volume or build-your-own lines are where 70 to 72 inch models and mega tops earn their space. You can browse all Hurakan equipment for more sizes. Orders of $999 or more ship free by freight; below that, freight is a flat $200. Questions about a specific model? Frequently asked questions
What are the standard sandwich prep table sizes?
The common widths are about 27, 36, 48, 60 and 70 to 72 inches, with one door on 27 inch units, two doors from about 36 to 60 inches, and three doors at 70 inches and up.
How many pans fit in a 48 inch prep table?
A standard top 48 inch unit typically holds twelve 1/6 pans, as on the Orikool 48. A mega top version, such as the Hurakan 48 inch, holds eighteen.
Is a mega top better than a standard top?
A mega top holds more pans in the same width but usually has a shallower cutting board. Choose it when topping variety matters more than board space.
What is the difference between a pizza prep table and a sandwich prep table?
A pizza prep table uses larger 1/3 size pans and a wider cutting surface for stretching dough. A sandwich prep table uses 1/6 pans and a narrower board.
What temperature should a refrigerated prep table hold?
The FDA Food Code 2022 calls for cold holding at 41 F or below. Most units here can be set between 33 and 41 F.
